How does Fernus work?

The patented Dutch design of FERNUS ensures an even cooking of your pizza in a very short time. Because the bottom of FERNUS is slanted, the heat from the gas flames flows in. Due to the round shapes, the hot air circulates so that your dish is evenly heated and you no longer have to turn your pizza halfway. This way you can make pizzas on your gas stove!

Place FERNUS in the most suitable place on your gas stove, preferably the wok burner. Ignite the stove after which the thermometer will rise rapidly to reach a temperature of 350°C after about 10 minutes.

FERNUS is the ideal indoor pizza oven, but it is much more than that. You can also prepare oven snacks, au gratin and even smoke with it. We have developed accessories especially for FERNUS that are available separately.

FERNUS comes with pizza shovel, thermometer and pizza stone

We recommend that the FERNUS pizza oven does not get hotter than 350°C. This is more than sufficient for all preparations. When you heat it up hotter, there is a risk of deformation of the underside. The temperature range of FERNUS is determined by the power of the gas stove.

WOK BURNERS – power from 2.5 to 5kW – 350 degrees in about 10 minutes.
NORMAL BURNERS – power between 1.5 and 2.5kW – approx. 300 degrees – longer time to heat up.
INDUSTRIAL BURNERS – propane or butane gas with power from 5 to 10kW – very fast heating up to 350 degrees.

More than a pizzaoven

FERNUS is the perfect indoor pizza oven, but it can do much more. You can also bake Turkish pizzas, Lebanese flatbreads or Indian naans in it, for example. Due to the high temperature, FERNUS is also very suitable for au gratin.

The air vortex that takes place in the oven thanks to the patented design also makes it suitable as an air fryer, for example to prepare your bitterballen.

With the special smoke set (sold separately) you can even turn Fernus into a smoker for a smoked salmon fillet or sausage.

Tips and Tricks

  • Making pizzas takes practice and will not go well right away. Don’t worry and hang in there, Rome wasn’t built in a day either!
  • It is important that you allow FERNUS to warm up properly. The thermometer reacts immediately but the pizza stone needs time to heat up.
  • The pizza stone is light in color and will darken during use due to burnt oil and food residue. This doesn’t matter!
  • Use dough balls of about 200 grams and bring them to a diameter of about 27 centimeters.
  • Do not make your pizza larger than about 27 centimeters, your shovel is a good measure.
  • Use dough at room temperature because it is much smoother and works better.
  • Do not leave an unbaked dough product on your pizza shovel for too long because the longer it remains, the more difficult it is to shoot in the oven.
  • Use corn or rice flour to get your pizza from your shovel onto the stone. As a result, your pizza base will not stick as quickly.
  • To practice, you can also cook your pizza for a minute on the blade of the pizza shovel in the oven. After this minute in a heated FERNUS, your pizza will slide more easily onto the stone.
  • With FERNUS on your gas stove, you can continue baking in succession because pizzas and other thin dough products are ready in about 4 minutes.
  • Make sure that your product does not get too high during baking. Baking a loaf of bread is excellent with FERNUS, but it should not be higher than about 7 centimeters because then it will bump into the thermometer and impede the circulation of the hot air.
  • Do not leave FERNUS on the gas unused for more than 15 minutes. Otherwise there is a risk of overheating.

How is Fernus put together?

FERNUS stovetop pizza oven for indoor use is made of die-cast aluminum. We love aluminum because it is abundantly available as a raw material and can be endlessly melted down into new products. FERNUS consists of a bottom, a top, a door and a cap. This cap makes way for the chip feeder if you want to use your oven as a smoker.

FERNUS comes with cordierite pizza stone, a thermometer and a handy pizza shovel.

FERNUS is made to be used indoors on the fire of your gas stove or outdoors on the flames of a gas burner or rocket stove. Not suitable for induction.

Within a few minutes, the FERNUS stovetop pizza oven can reach temperatures of 350°C. Cooking at these high temperatures is great fun, but can also be dangerous, so it requires caution and a little practice.

Where can you use Fernus?

1. A free-standing 5-burner gas stove with central wok burner

This is the most ideal situation. FERNUS can be safely used on a 5-burner free-standing gas stove with a central wok burner of approximately 2.5 to 5 kW. FERNUS has ample free space and the control knobs are located on the front of the cooker and are protected from the radiant heat.

Do you have a freestanding gas stove with a wok burner on the side or do you have a 4-burner gas stove without a wok burner? See below under which conditions your stove is suitable.

2. Use on a built-in gas stove with loose pan support on a flat surface

Does your built-in gas stove consist of a glass plate with a built-in gas burner or a solid counter top with round-shaped gas burners? We have developed the PitStand for this use case. The PitStand ensures that you can freely place your FERNUS above your gas flame. The Pitstand also increases the distance to the glass plate or your kitchen worktop, reducing the radiant heat downwards.

The surface or countertop must be made of a heat-resistant material to absorb the radiant heat, such as glass, granite or natural stone.

3. Outside

FERNUS is very suitable for outdoor use because the radiant heat can be properly dissipated outdoors. Only use mobile gas stoves, gas burners or rocket stoves on which FERNUS can be placed stably.
